As the days turn cooler and the evenings draw in, there’s nothing better than a warm dessert that fills your kitchen with the scent of cinnamon and baked fruit. These Autumn Baked Peaches are the perfect transition recipe-light enough to keep that end-of-summer freshness, but infused with the cosy spices of autumn.

Ripe peaches are halved and roasted with a drizzle of coconut oil, then filled with a buttery cinnamon-sugar centre that caramelises in the oven. Served warm with melting vanilla ice cream (or custard if you’re feeling truly autumnal), this dessert is simple, seasonal, and soul-soothing.
Recipe (serves 2)
2 ripe peaches, halved & stone removed 1 tsp coconut oil (for drizzling) 1 knob butter (about 10g) 1 tbsp brown sugar (or coconut sugar) ½ tsp cinnamon (or mixed spice for extra autumn flavour) 1 tsp extra coconut oil (for the filling) 2 scoops vanilla ice cream or custard

Method
Preheat oven to 180°C (350°F). Halve peaches, remove stone, drizzle with coconut oil, and bake cut side down for 10 minutes. Stir butter, sugar, cinnamon, and coconut oil together into a smooth filling. Flip peaches over, spoon filling into the centre, and bake another 5 minutes. Serve warm with vanilla ice cream or custard.
Autumn Tips

Sprinkle a little nutmeg or ground cloves into the filling for deeper autumn spice. Swap peaches for nectarines, pears, or plums-perfect for seasonal variety. Serve with granola on top if you want a crunchy, autumn-crumble vibe.
